- 1 pound fresh scallops, diced
- 1/2 cup lime juice
- 1/2 cup orange juice
- 1 small red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Salt to taste
- 8–10 plantain chips
Instructions
- In a bowl, combine the diced scallops, lime juice, and orange juice. Let it marinate for about 30 minutes.
- Add the chopped red onion, minced jalapeño, and cilantro to the scallop mixture.
- Season with salt to taste.
- Arrange the plantain chips on a serving platter.
- Spoon the scallop ceviche mixture onto each plantain chip.
- Serve immediately and enjoy!
