Seaweed Salad Sushi Bites are a delicious and healthy appetizer that combines the flavors of traditional sushi with the refreshing taste of seaweed salad.
Ingredients

- 1 cup sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1 cup seaweed salad
- 1/2 cucumber, thinly sliced
- 1 avocado, sliced
- Sesame seeds for garnish
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and water, and bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Once the rice is cooked, remove from heat and let it cool slightly before mixing in the vinegar mixture.
- Lay a sheet of nori on a bamboo sushi mat.
- Spread a thin layer of sushi rice over the nori, leaving a small border at the top.
- Add a layer of seaweed salad, cucumber, and avocado on top of the rice.
- Roll the sushi tightly using the mat, then slice into bite-sized pieces.
- Sprinkle sesame seeds on top before serving.
Notes
- For a spicier kick, add a drizzle of sriracha or wasabi.
- Make sure to use sushi-grade ingredients for the best flavor.
- These bites can be served cold or at room temperature.
