A quick and delicious meal featuring seasoned chicken and fresh vegetables served in warm pitas with a flavorful herby ranch dressing.

- 1 lb chicken breast, cut into strips
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 4 whole wheat pitas
- 1/2 cup Greek yogurt
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine chicken strips, olive oil, garlic powder, paprika, salt, and pepper.
- Spread the chicken and sliced vegetables on a sheet pan.
- Bake for 20-25 minutes or until the chicken is cooked through.
- While the chicken is baking, mix Greek yogurt, dill, parsley, and lemon juice in a small bowl to make the herby ranch dressing.
- Warm the pitas in the oven for the last 5 minutes of cooking.
- Assemble the pitas by filling them with the chicken and vegetable mixture, then drizzle with herby ranch dressing.
Notes
- Feel free to substitute the vegetables with your favorites.
- This dish can be made ahead of time and stored in the refrigerator.
- For a spicier kick, add some red pepper flakes to the chicken seasoning.
