Description

A quick and delicious meal featuring seasoned chicken and fresh vegetables served in warm pitas with a flavorful herby ranch dressing.


Ingredients

  • 1 lb chicken breast, cut into strips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 4 whole wheat pitas
  • 1/2 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine chicken strips, olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the chicken and sliced vegetables on a sheet pan.
  4. Bake for 20-25 minutes or until the chicken is cooked through.
  5. While the chicken is baking, mix Greek yogurt, dill, parsley, and lemon juice in a small bowl to make the herby ranch dressing.
  6. Warm the pitas in the oven for the last 5 minutes of cooking.
  7. Assemble the pitas by filling them with the chicken and vegetable mixture, then drizzle with herby ranch dressing.
