- 8 rice paper wrappers
- 1 lb shrimp, cooked and peeled
- 1 cup lettuce, shredded
- 1 cup carrots, julienned
- 1 cup cucumber, julienned
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1 tsp sesame oil
Instructions
- Prepare all the vegetables and shrimp.
- Soak the rice paper wrappers in warm water until soft.
- Place a wrapper on a flat surface and layer with lettuce, shrimp, carrots, cucumber, mint, and cilantro.
- Fold the sides of the wrapper over the filling and roll tightly.
- Repeat with remaining wrappers and filling.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, and sesame oil to create the peanut sauce.
- Serve the spring rolls with the peanut sauce on the side.
Notes
- Make sure to keep the rice paper wrappers covered with a damp cloth to prevent them from drying out.
- You can customize the filling with other vegetables or proteins as desired.
- These spring rolls are best served fresh but can be stored in the refrigerator for a few hours.
