Ingredients

- 1 large cucumber
- 1 ripe avocado
- 4 oz smoked salmon
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh dill for garnish
Instructions
- Wash the cucumber and slice it into 1/2 inch thick rounds.
- In a bowl, mash the avocado and mix in the lemon juice, salt, and pepper.
- Spread a generous amount of the avocado mixture on each cucumber slice.
- Top each slice with a piece of smoked salmon.
- Garnish with fresh dill.
- Serve immediately and enjoy!
Notes
- For added flavor, you can sprinkle some capers on top.
- These bites are best served fresh but can be prepared a few hours in advance and stored in the refrigerator.
