A delicious smothered burrito topped with a rich green chile sauce, perfect for a hearty meal.
Ingredients

- 4 large flour tortillas
- 2 cups cooked rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup cooked chicken, shredded
- 2 cups green chile sauce
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the cooked rice, black beans, shredded chicken, and half of the cheese. Season with salt and pepper.
- Place a generous amount of the filling in the center of each tortilla and roll them up tightly.
- Place the rolled burritos in a baking dish and pour the green chile sauce over the top.
- Sprinkle the remaining cheese on top of the sauce.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with sour cream and chopped cilantro before serving.
Notes
- For a vegetarian option, omit the chicken and add more beans or vegetables.
- Adjust the spiciness of the green chile sauce to your preference.
- These burritos can be made ahead of time and frozen for later use.
