Description

Deliciously soft and chewy pretzel bites made from sourdough discard, perfect for snacking or sharing.


Ingredients

  • 2 cups sourdough discard
  • 1 cup warm water
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 4 cups all-purpose flour
  • 1/4 cup baking soda
  • Coarse salt for sprinkling

Instructions

  1. In a large mixing bowl, whisk together the sourdough discard, warm water, sugar, and salt until well blended.
  2. Gradually add the all-purpose flour, mixing until a shaggy dough starts to form.
  3. Transfer the dough onto a floured surface and knead for about 5 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 30-60 minutes until it has doubled in size.
  5. Preheat your oven to 450°F (230°C).
  6. In a large pot, bring at least 6 cups of water to a boil and whisk in the baking soda.
  7. Once the dough has risen, cut it into small pieces and shape them into bite-sized balls or pretzel shapes.
  8. Boil each piece in the baking soda water for about 30 seconds, turning them halfway.
  9. Place the boiled bites on a greased baking sheet lined with parchment paper and sprinkle with coarse salt.
  10. Bake for 10-12 minutes until golden brown and aromatic.
  11. Serve warm with your favorite dipping sauces.

Notes

Ensure all ingredients are at room temperature for better integration. You can prepare the dough and let it rise overnight in the fridge.
