- 2 pounds ripe plums, pitted and chopped
- 1 cup granulated sugar
- 1/4 cup lemon juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon allspice
- 1/4 teaspoon nutmeg
Instructions
- In a large pot, combine the chopped plums, sugar, and lemon juice.
- Cook over medium heat until the sugar dissolves and the mixture starts to bubble.
- Add the spices (cinnamon, ginger, cloves, allspice, nutmeg) and stir well.
- Bring the mixture to a boil, then reduce the heat and simmer for about 30-40 minutes, stirring occasionally.
- Check the consistency of the jam; it should be thick enough to coat the back of a spoon.
- Once ready, pour the hot jam into sterilized jars and seal them immediately.
- Let the jars cool completely before storing them in the refrigerator.
