- 2 cups hatch green chilies, chopped

- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder

- 12 mini corn tortillas
- 1 cup shredded cheese
- 1/2 cup sour cream
- Fresh cilantro for garnish
Instructions
- In a skillet, cook the diced chicken over medium heat until browned.
- Add the chopped hatch green chilies, cumin, paprika, garlic powder, onion powder, salt, and pepper. Stir well and cook for an additional 5 minutes.
- Warm the mini corn tortillas in a separate pan.
- Assemble the tacos by placing the chicken mixture on each tortilla.
- Top with shredded cheese and a dollop of sour cream.
- Garnish with fresh cilantro before serving.
