Delicious and spicy lobster jalapeño poppers that are perfect for parties or as a tasty appetizer.

- 12 large jalapeño peppers
- 1 cup cooked lobster meat, chopped
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the jalapeño peppers in half lengthwise and remove the seeds.
- In a bowl, mix together the lobster meat, cream cheese, cheddar cheese, garlic, paprika, cayenne pepper, salt, and pepper.
- Stuff each jalapeño half with the lobster mixture.
- Sprinkle breadcrumbs on top of the stuffed jalapeños.
- Place the jalapeños on a baking sheet and drizzle with olive oil.
- Bake for 20-25 minutes or until the jalapeños are tender and the tops are golden brown.
- Serve hot and enjoy!
Notes
- For extra heat, leave some seeds in the jalapeños.
- These can be made ahead of time and frozen before baking.
- Serve with a dipping sauce like ranch or blue cheese dressing.
