Ingredients

  • 4 large bell peppers, diced
  • 1 lb ground beef or turkey
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup rice, uncooked
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat.
  2. Add the chopped onions and minced garlic, cooking until softened.
  3. Stir in the diced bell peppers and cook for another 5 minutes.
  4. Add the diced tomatoes, broth, rice, Italian seasoning, salt, and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer for 30 minutes.
  6. If desired, stir in shredded cheese before serving.

Notes

  • Feel free to use any color of bell peppers.
  • This soup can be made ahead and stored in the refrigerator for up to 3 days.
