Description

Delicious no-bake cheesecake bites filled with fresh raspberries, perfect for a guiltless dessert.


Ingredients

  • 1 cup full-fat cream cheese (240 g)
  • 1 teaspoon vanilla flavor
  • 3 tablespoons powdered keto sweetener
  • 1/2 cup blanched almond flour (50 g)
  • 12 fresh raspberries (about 40 g)
  • 3/4 cup blanched almonds, toasted and finely chopped (100 g) or unsweetened desiccated coconut
  • Optional: pinch of fine sea salt

Instructions

  1. Soften the cream cheese in a mixing bowl until creamy.
  2. Add vanilla flavor and powdered sweetener, mixing until glossy.
  3. Blend in the almond flour until a uniform batter forms.
  4. Taste the mixture and adjust sweetness if necessary.
  5. Prepare a baking tray lined with parchment paper.
  6. Spoon portions of the mixture onto the tray.
  7. Chill in the freezer for about 30 minutes.
  8. Form each chilled portion into a ball using your hands.
  9. Press a raspberry into the center of each ball.
  10. Roll balls in chopped almonds or coconut.
  11. Final chill until firm or refrigerate until serving.
  12. Allow to soften slightly at room temperature before enjoying.
