Ingredients

- 1 cup full-fat cream cheese (240 g)
- 1 teaspoon vanilla flavor
- 3 tablespoons powdered keto sweetener
- 1/2 cup blanched almond flour (50 g)
- 12 fresh raspberries (about 40 g)
- 3/4 cup blanched almonds, toasted and finely chopped (100 g) or unsweetened desiccated coconut
- Optional: pinch of fine sea salt
Instructions
- Soften the cream cheese in a mixing bowl until creamy.
- Add vanilla flavor and powdered sweetener, mixing until glossy.
- Blend in the almond flour until a uniform batter forms.
- Taste the mixture and adjust sweetness if necessary.
- Prepare a baking tray lined with parchment paper.
- Spoon portions of the mixture onto the tray.
- Chill in the freezer for about 30 minutes.
- Form each chilled portion into a ball using your hands.
- Press a raspberry into the center of each ball.
- Roll balls in chopped almonds or coconut.
- Final chill until firm or refrigerate until serving.
- Allow to soften slightly at room temperature before enjoying.
