Ingredients

  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 avocado, sliced
  • 1 cucumber, thinly sliced
  • 4 ounces cooked shrimp or crab meat
  • 2 sheets nori, cut into squares
  • Soy sauce, for serving

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold this mixture into the rice and let it cool.
  4. Prepare your ingredients: slice the avocado and cucumber, and chop the shrimp or crab meat.
  5. To assemble, place a square of nori on a plate, add a layer of sushi rice, followed by avocado, cucumber, and shrimp or crab.
  6. Repeat the layers until you reach the desired height, finishing with a layer of sushi rice on top.
  7. Serve with soy sauce for dipping.
