- 1 cup sushi rice
- 1 1/4 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 avocado, sliced
- 1 cucumber, thinly sliced
- 4 ounces cooked shrimp or crab meat
- 2 sheets nori, cut into squares
- Soy sauce, for serving
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- Combine the rice and water in a rice cooker and cook according to the manufacturer’s instructions.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, fold this mixture into the rice and let it cool.
- Prepare your ingredients: slice the avocado and cucumber, and chop the shrimp or crab meat.
- To assemble, place a square of nori on a plate, add a layer of sushi rice, followed by avocado, cucumber, and shrimp or crab.
- Repeat the layers until you reach the desired height, finishing with a layer of sushi rice on top.
- Serve with soy sauce for dipping.
