- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1/4 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Cooked rice or quinoa for serving
Instructions
- Heat vegetable oil in a large skillet over medium-high heat.
- Add garlic and ginger, sauté for 1 minute until fragrant.
- Add shrimp and cook until pink and opaque, about 3-4 minutes.
- Stir in bell peppers, broccoli, and snap peas; cook for another 3-4 minutes until vegetables are tender-crisp.
- Pour in sweet chili sauce and soy sauce, stirring to coat everything evenly.
- Serve over cooked rice or quinoa.
Notes
- Feel free to add other vegetables like carrots or zucchini.
- Adjust the sweetness of the sauce by adding more or less sweet chili sauce.
