  • 2 oranges, juiced and zested
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix orange juice, zest, honey, soy sauce, olive oil, garlic, ginger, salt, and pepper.
  3. Place the chicken in a roasting pan and pour the marinade over it, ensuring it is well coated.
  4. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Baste the chicken with the marinade every 30 minutes for extra flavor.
  6. Let the chicken rest for 10 minutes before carving.
