Description

A flavorful Thai dish featuring tender chicken meatballs simmered in a rich coconut curry, complemented by the freshness of cilantro and served over jasmine rice or noodles.


Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon lime juice
  • 1 teaspoon Thai red curry paste
  • Salt and pepper to taste
  • 1 can (14 oz) coconut milk
  • 1 tablespoon fish sauce
  • Fresh cilantro, for garnish
  • Jasmine rice or noodles, for serving

Instructions

  1. In a large mixing bowl, gently combine the ground chicken, breadcrumbs, egg, minced garlic, minced ginger, lime juice, Thai red curry paste, and a sprinkle of salt and pepper. Form into 1-inch meatballs.
  2. Heat a tablespoon of oil in a skillet over medium heat, then add your meatballs, browning them on all sides for 8-10 minutes.
  3. Once browned, pour in the coconut milk and add the fish sauce, stirring gently to combine.
  4. Add the browned meatballs back into the skillet, allowing to simmer for 10-15 minutes.
  5. Serve over jasmine rice or noodles, garnished with fresh cilantro.

Notes

Make-ahead meatballs can be stored in the refrigerator for a day and reheated before serving. Customize with your favorite vegetables for added nutrition.
