Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons vegetable oil
  • Chopped peanuts and cilantro for garnish

Instructions

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add broccoli, bell pepper, and carrot to the skillet and stir-fry for another 3-4 minutes.
  4. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, and ginger until smooth.
  5. Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly.
  6. Serve the chicken and vegetable mixture over cooked rice.
  7. Garnish with chopped peanuts and cilantro before serving.
