A delicious and easy-to-make Thai Peanut Chicken Rice Bowl that combines tender chicken, fresh vegetables, and a creamy peanut sauce over rice.

- 1 lb chicken breast, diced
- 2 cups cooked rice
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons vegetable oil
- Chopped peanuts and cilantro for garnish
Instructions
- In a large skillet, heat vegetable oil over medium heat.
- Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
- Add broccoli, bell pepper, and carrot to the skillet and stir-fry for another 3-4 minutes.
- In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, and ginger until smooth.
- Pour the peanut sauce over the chicken and vegetables, stirring to coat evenly.
- Serve the chicken and vegetable mixture over cooked rice.
- Garnish with chopped peanuts and cilantro before serving.
Notes
- For a spicier version, add red pepper flakes to the sauce.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
