- 2 cups jasmine rice
- 1 can (13.5 oz) coconut milk
- 1 lb chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup pineapple chunks
- 1 cup mango, diced
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, sliced
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- Rinse the jasmine rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and coconut milk. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
- While the rice is cooking, heat olive oil in a skillet over medium heat. Add diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper.
- Cook the chicken for about 7-10 minutes, or until fully cooked and golden brown.
- In a large bowl, combine the cooked coconut rice, chicken, pineapple, mango, red bell pepper, and green onions.
- Drizzle with lime juice and toss gently to combine.
- Serve in bowls, garnished with fresh cilantro.
Notes
- For extra flavor, marinate the chicken in lime juice and spices for 30 minutes before cooking.
- Feel free to add other tropical fruits like kiwi or papaya.
