  • 2 cups jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup pineapple chunks
  • 1 cup mango, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, sliced
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and coconut milk. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until rice is cooked.
  3. While the rice is cooking, heat olive oil in a skillet over medium heat. Add diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper.
  4. Cook the chicken for about 7-10 minutes, or until fully cooked and golden brown.
  5. In a large bowl, combine the cooked coconut rice, chicken, pineapple, mango, red bell pepper, and green onions.
  6. Drizzle with lime juice and toss gently to combine.
  7. Serve in bowls, garnished with fresh cilantro.
