- 4 large russet potatoes
- 1/2 cup butter
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup chopped green onions
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Bake the potatoes on the sheet for about 1 hour, until tender.
- Cool the potatoes slightly, then cut them in half lengthwise and scoop out the insides into a mixing bowl.
- Mash the potato insides with butter, sour cream, and half of the cheddar cheese until creamy.
- Stir in the crumbled bacon and green onions, seasoning with salt and pepper.
- Fill the potato skins with the mixture and top with the remaining cheese.
- Bake at 375°F (190°C) for 15-20 minutes until cheese is bubbly and golden.
- Serve warm and enjoy!
Notes
Can be prepared ahead of time. Make the filling a day in advance and fill potato skins before baking.
