Description

A comforting and creamy casserole featuring fluffy russet potatoes, rich cheese, crispy bacon, and fresh green onions.


Ingredients

  • 4 large russet potatoes
  • 1/2 cup butter
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Bake the potatoes on the sheet for about 1 hour, until tender.
  3. Cool the potatoes slightly, then cut them in half lengthwise and scoop out the insides into a mixing bowl.
  4. Mash the potato insides with butter, sour cream, and half of the cheddar cheese until creamy.
  5. Stir in the crumbled bacon and green onions, seasoning with salt and pepper.
  6. Fill the potato skins with the mixture and top with the remaining cheese.
  7. Bake at 375°F (190°C) for 15-20 minutes until cheese is bubbly and golden.
  8. Serve warm and enjoy!

Notes

Can be prepared ahead of time. Make the filling a day in advance and fill potato skins before baking.
