- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 vanilla bean, split and scraped
- 2 tablespoons unsalted butter
- Fresh berries (strawberries, blueberries, raspberries) for topping
Instructions
- In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt.
- Add the vanilla bean seeds and pod to the mixture.
- Cook over medium heat, stirring constantly until the mixture thickens and comes to a gentle boil.
- Remove from heat and stir in the butter until melted.
- Pour the pudding into serving dishes and let it cool to room temperature.
- Refrigerate for at least 2 hours before serving.
- Top with fresh berries before serving.
Notes
- For a richer flavor, use half-and-half instead of whole milk.
- Make sure to remove the vanilla bean pod before serving.
- This pudding can be made a day in advance.
