- 1 cup granulated sugar
- 1 vanilla bean, split and scraped
- 1 tablespoon lemon juice
- 1/2 teaspoon pectin (optional)
Instructions
- In a large saucepan, combine the raspberries, sugar, and lemon juice.
- Add the scraped vanilla bean and its pod to the mixture.
- Heat over medium heat, stirring until the sugar dissolves and the raspberries start to break down.
- Bring the mixture to a boil and let it cook for about 10-15 minutes, stirring frequently.
- If using, add the pectin and stir well to combine.
- Remove from heat and let it cool slightly.
- Pour the jam into sterilized jars and seal tightly.
- Allow to cool completely before storing in the refrigerator.

- For a smoother texture, blend the jam before pouring it into jars.
- This jam can be stored in the refrigerator for up to 3 weeks.
