  • 1 package of pizza dough
  • 2 large onions, thinly sliced
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup vegan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat and add sliced onions. Cook until caramelized, about 15-20 minutes.
  3. Add fresh spinach to the skillet and cook until wilted.
  4. Roll out the pizza dough on a floured surface and cut into rectangles.
  5. Place a spoonful of the onion and spinach mixture on each rectangle and sprinkle with vegan cheese if using.
  6. Roll up the dough and seal the edges.
  7. Place the rolls on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until golden brown.
  9. Let cool slightly before serving.
