Ingredients

  • 1 cup lentils, rinsed
  • 2 cups vegetable broth
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a pot, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20 minutes.
  2. Drain any excess liquid and let the lentils cool slightly.
  3. In a skillet, sauté onion and garlic until translucent.
  4. In a large bowl, combine lentils, sautéed onion and garlic, grated carrot, breadcrumbs, parsley, cumin, paprika, salt, and pepper. Mix well.
  5. Form the mixture into patties.
  6. Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side, or until golden brown.
  7. Serve warm with your favorite sauce or in a burger bun.

  • These patties can be frozen for later use.
