A delicious and healthy recipe for vegan lentil patties that are easy to make and packed with flavor.
Ingredients

- 1 cup lentils, rinsed
- 2 cups vegetable broth
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 carrot, grated
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a pot, combine lentils and vegetable broth. Bring to a boil, then reduce heat and simmer until lentils are tender, about 20 minutes.
- Drain any excess liquid and let the lentils cool slightly.
- In a skillet, sauté onion and garlic until translucent.
- In a large bowl, combine lentils, sautéed onion and garlic, grated carrot, breadcrumbs, parsley, cumin, paprika, salt, and pepper. Mix well.
- Form the mixture into patties.
- Heat a non-stick skillet over medium heat and cook the patties for about 5 minutes on each side, or until golden brown.
- Serve warm with your favorite sauce or in a burger bun.
Notes
- These patties can be frozen for later use.
- Feel free to add other vegetables or spices to customize the flavor.
- Serve with a side salad for a complete meal.
