Ingredients

  • 1/2 cup plant-based protein powder
  • 1/4 cup maple syrup
  • 1/2 cup almond milk
  • 1/4 cup unsweetened applesauce
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup mixed berries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, rolled oats, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, combine the maple syrup, almond milk, and applesauce.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the mixed berries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
