Ingredients

- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/2 cup plant-based protein powder
- 1/4 cup maple syrup
- 1/2 cup almond milk
- 1/4 cup unsweetened applesauce
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup mixed berries (fresh or frozen)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the whole wheat flour, rolled oats, protein powder, baking powder, baking soda, and salt.
- In another bowl, combine the maple syrup, almond milk, and applesauce.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the mixed berries.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

- These muffins can be frozen for up to 3 months.
