Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cauliflower florets in a large mixing bowl with olive oil, salt, and pepper.
- Spread the seasoned cauliflower in a single layer on a baking sheet.
- Roast for 20-25 minutes until tender and golden.
- Toss the cauliflower with BBQ sauce after removing from the oven.
- Warm each tortilla on a skillet for about 30 seconds per side.
- Assemble the tacos with roasted cauliflower and shredded slaw.
- Finish with fresh toppings, including cilantro and avocado.
