Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cauliflower florets in a large mixing bowl with olive oil, salt, and pepper.
  3. Spread the seasoned cauliflower in a single layer on a baking sheet.
  4. Roast for 20-25 minutes until tender and golden.
  5. Toss the cauliflower with BBQ sauce after removing from the oven.
  6. Warm each tortilla on a skillet for about 30 seconds per side.
