Ingredients

- 1 1/4 cups water
- 2 cups diced watermelon
- 1 cup crumbled feta cheese
- 1/4 cup fresh mint leaves, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar

Instructions
- In a medium saucepan, bring water to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff couscous with a fork and let it cool.
- In a large bowl, combine the diced watermelon, crumbled feta, and chopped mint.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Add the cooled couscous to the watermelon mixture and drizzle with the dressing.
- Toss gently to combine and serve chilled or at room temperature.
