Instructions

  1. Preheat your oven to 375°F (190°C). Line your jelly roll pan with parchment paper and lightly grease it.
  2. Combine dry ingredients: In a small bowl, whisk together flour, baking powder, and salt until evenly mixed.
  3. Mix eggs and sugar: Using a large bowl, beat the eggs and granulated sugar together until thick and pale—about 5-7 minutes.
  4. Add vanilla and milk, mixing until fully incorporated.
  5. Combine wet and dry: Gradually fold the dry mixture into the egg mixture until just combined.
  6. Add color (if desired): Divide the batter into three bowls, dyeing one red and another blue. Pour these colors onto the prepared pan in a swirling pattern.
  7. Bake: Place the pan in the oven and bake for about 12-15 minutes, or until the cake springs back.
  8. Prepare for rolling: Dust a kitchen towel with powdered sugar.
  9. Roll the cake: Once baked, carefully flip the cake onto the towel, peel away parchment, and roll it tightly in the towel. Let it cool completely.
  10. Fill and roll: Unroll the cake gently, spread the filling, and roll it back up without the towel.
  11. Chill: Place the rolled cake in the fridge for at least 30 minutes to set before slicing.
  12. Serve: Garnish with fresh berries, slice, and savor.
