Description
Delight in creamy cheese-filled tortellini enveloped in a luscious Alfredo sauce with vibrant broccoli florets.
Ingredients
Scale
- 8 oz cheese tortellini
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 cup broccoli florets
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Cook the tortellini according to the package instructions, typically about 3-5 minutes for fresh, or longer for frozen. Drain well, but reserve a splash of the pasta water for later use.
- In a large skillet over medium heat, melt the butter until it begins to foam slightly, signaling it’s ready for the garlic.
- Sauté the minced garlic for about 30 seconds, just until it’s fragrant.
- Pour the heavy cream into the skillet, raising the heat slightly to bring it to a gentle simmer.
- Gradually whisk in the Parmesan cheese until it melts into a creamy sauce. Season with salt and pepper.
- Toss in the broccoli florets and allow them to cook for 2-3 minutes until tender but vibrant.
- Gently mix in the cooked tortellini, adding reserved pasta water until you reach your desired consistency.
- Serve warm, garnished with a sprinkle of additional cheese or herbs if desired.
Notes
For make-ahead, prepare the sauce in advance and store it in the fridge. Reheat gently before serving.
