- 2 skinless, boneless chicken breasts
- 1 cup mixed vegetables (bell peppers, zucchini, broccoli)
- 1/2 cup barbecue sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Aluminum foil
Instructions
- Preheat your grill to medium-high heat.
- Cut two large pieces of aluminum foil, about 12 inches in length.
- Lay one chicken breast in the center of each piece of foil.
- Top each chicken breast with mixed vegetables.
- Drizzle olive oil and barbecue sauce over the chicken and vegetables.
- Season with salt and pepper to taste.
- Fold the foil over the chicken and vegetables, sealing tightly to create a packet.
- Place the packets directly on the grill and cook for about 15 minutes.
- Carefully unwrap the foil packets with tongs and serve hot.
Notes
Prepare packets ahead of time and store in the fridge. If grilling isn’t an option, bake at 400°F for about 20 minutes.
