Description

Ingredients

  • 2 skinless, boneless chicken breasts
  • 1 cup mixed vegetables (bell peppers, zucchini, broccoli)
  • 1/2 cup barbecue sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Aluminum foil

Instructions

  1. Preheat your grill to medium-high heat.
  2. Cut two large pieces of aluminum foil, about 12 inches in length.
  3. Lay one chicken breast in the center of each piece of foil.
  4. Top each chicken breast with mixed vegetables.
  5. Drizzle olive oil and barbecue sauce over the chicken and vegetables.
  6. Season with salt and pepper to taste.
  7. Fold the foil over the chicken and vegetables, sealing tightly to create a packet.
  8. Place the packets directly on the grill and cook for about 15 minutes.
  9. Carefully unwrap the foil packets with tongs and serve hot.

Notes

Prepare packets ahead of time and store in the fridge. If grilling isn’t an option, bake at 400°F for about 20 minutes.
