  • 2 cups fresh cherries, pitted
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pie crust (homemade or store-bought)
  • 1 tablespoon butter
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the blueberries, pitted cherries, granulated sugar, cornstarch, vanilla extract, and lemon juice in a large mixing bowl.
  3. Pour the fruit filling into the prepared pie crust.
  4. Cover with a second pie crust, sealing the edges carefully.
  5. Whisk together the egg and milk, then apply it over the crust using a pastry brush.
  6. Bake for 15 minutes at 425°F, then reduce the temperature to 350°F (175°C) and bake for an additional 30 to 35 minutes.
  7. Allow the pie to cool for at least 30 minutes before slicing.

Notes

For a nutty flavor, consider using a whole wheat crust or adding almond extract into the filling.
