- 1 lb Breakfast sausage
- 6 large Eggs
- 1 cup Cheddar cheese, shredded
- 2 cups Hash browns, frozen
- 10 Egg roll wrappers
- Vegetable or canola oil for frying
- Salt and pepper to taste
Instructions
- Brown the sausage: Heat your skillet over medium-high heat. Add the breakfast sausage, breaking it apart with a spatula. Cook until browned and fully cooked through, approximately 5-7 minutes.
- Scramble the eggs: In the same skillet, pour in the beaten eggs. Stir occasionally until they just set, about 3-4 minutes.
- Combine ingredients: In a mixing bowl, combine the cooked sausage, scrambled eggs, cheddar cheese, and hash browns. Season with salt and pepper.
- Roll the egg rolls: Lay an egg roll wrapper on the rolling surface. Spoon 2-3 tablespoons of filling onto the wrapper, fold the bottom corner up, fold the sides in, and roll tightly. Seal with water.
- Fry the egg rolls: Heat about 2 inches of oil over medium-high heat. Carefully place the egg rolls into the hot oil, frying for about 3-4 minutes per side until golden brown.
- Drain and serve: Use tongs to place the cooked egg rolls on paper towels to drain excess oil. Serve warm with your preferred dipping sauces.
Notes
You can assemble egg rolls the night before and store them in the fridge. Additionally, they can be baked or cooked in an air fryer.
