- 1 cup Buffalo Sauce
- 1 cup Rice (white or brown)
- 1 cup Mixed Vegetables (bell peppers, carrots, broccoli)
- ½ cup Creamy Dressing (ranch or blue cheese)
- Green onions and shredded cheese for topping
Instructions
- Cook the rice: Rinse the rice under cold water, bring a saucepan of water to a boil, add the rice, and follow the package instructions.
- Cook the chicken: Heat a large skillet over medium heat, add olive oil, then add chicken breasts. Cook for 6-7 minutes on each side until fully cooked. Remove and let rest before shredding.
- Toss with buffalo sauce: Return the chicken to the skillet, pour in buffalo sauce, and stir to coat. Heat through for 1-2 minutes.
- Assemble the bowls: Start layering cooked rice, followed by the buffalo chicken.
- Add vegetables: Layer in mixed vegetables for added color and crunch.
- Drizzle and top: Drizzle creamy dressing and add green onions, shredded cheese, or other toppings.
- Serve and enjoy: Best served immediately or for meal prep. Store leftovers in an airtight container.
