- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup unsalted butter, melted
- 3 large eggs
- 2 cups grated carrots
- 1 cup chopped nuts (optional)
- 8 oz cream cheese
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking dish.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until evenly combined.
- In a large bowl, combine the granulated sugar, brown sugar, and melted butter. Mix until smooth and creamy.
- Incorporate the eggs, one at a time, mixing well after each addition.
- Gradually stir in the flour mixture, mixing just until combined.
- Fold in the grated carrots and nuts (if using) gently with a spatula.
- Pour the batter into the prepared baking dish and smooth the top with a spatula.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool while you prepare the frosting.
- Beat the cream cheese, powdered sugar, milk, and vanilla until smooth.
- Once the bars have cooled completely, drizzle the frosting over the top and cut into squares.
Notes
For added flavor, consider adding raisins or crushed pineapple to the batter.
