Description

Moist and tender carrot cake bars infused with warm spices and topped with a luscious cream cheese drizzle, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, melted
  • 3 large eggs
  • 2 cups grated carrots
  • 1 cup chopped nuts (optional)
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking dish.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until evenly combined.
  3. In a large bowl, combine the granulated sugar, brown sugar, and melted butter. Mix until smooth and creamy.
  4. Incorporate the eggs, one at a time, mixing well after each addition.
  5. Gradually stir in the flour mixture, mixing just until combined.
  6. Fold in the grated carrots and nuts (if using) gently with a spatula.
  7. Pour the batter into the prepared baking dish and smooth the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool while you prepare the frosting.
  10. Beat the cream cheese, powdered sugar, milk, and vanilla until smooth.
  11. Once the bars have cooled completely, drizzle the frosting over the top and cut into squares.

Notes

For added flavor, consider adding raisins or crushed pineapple to the batter.
