- 1 cup grated carrots
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour

- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract (for filling)
- 1/2 cup whipped cream
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease your mini muffin tin.
- Mix the grated carrots, granulated sugar, brown sugar, vegetable oil, eggs, and 1 teaspoon of vanilla extract in a mixing bowl.
- Combine the all-purpose flour, baking soda, cinnamon, nutmeg, and salt in another bowl.
- Unite both mixtures by gradually adding the dry mixture to the wet ingredients, stirring gently until just combined.
- Fill the muffin tin by spooning the batter into the mini muffin cups until two-thirds full.
- Bake for 15-18 minutes, until a toothpick inserted comes out clean.
- Prepare the cheesecake filling by beating the softened cream cheese until smooth, then adding the powdered sugar and remaining 1/2 teaspoon vanilla extract.
- Fold in the whipped cream gently until light and fluffy.
- Top the cooled carrot cake bites with a dollop of cheesecake filling.
Notes
For best flavor, fill the bites with cheesecake shortly before serving. Consider adding crushed nuts for added texture.
