Delightful bite-sized treats that combine the warm flavors of carrot cake with creamy cheesecake filling.


Ingredients

  • 1 cup grated carrots
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)
  • 1/2 cup whipped cream

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your mini muffin tin.
  2. Mix the grated carrots, granulated sugar, brown sugar, vegetable oil, eggs, and 1 teaspoon of vanilla extract in a mixing bowl.
  3. Combine the all-purpose flour, baking soda, cinnamon, nutmeg, and salt in another bowl.
  4. Unite both mixtures by gradually adding the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fill the muffin tin by spooning the batter into the mini muffin cups until two-thirds full.
  6. Bake for 15-18 minutes, until a toothpick inserted comes out clean.
  7. Prepare the cheesecake filling by beating the softened cream cheese until smooth, then adding the powdered sugar and remaining 1/2 teaspoon vanilla extract.
  8. Fold in the whipped cream gently until light and fluffy.
  9. Top the cooled carrot cake bites with a dollop of cheesecake filling.

Notes

For best flavor, fill the bites with cheesecake shortly before serving. Consider adding crushed nuts for added texture.
