Description

Deliciously fluffy carrot cake cinnamon rolls topped with rich cream cheese frosting, perfect for breakfast or special occasions.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup warm milk
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 packet active dry yeast
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1 cup grated carrots
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup cream cheese
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Combine warm milk with sugar in a mixing bowl. Sprinkle yeast over the top and let it sit for about 5 minutes, until frothy.
  2. Whisk together flour and salt in a separate mixing bowl.
  3. Pour the yeast mixture into the dry ingredients, followed by melted butter and the egg. Stir until a rough dough forms.
  4. Knead the dough on a floured surface for approximately 5 minutes until smooth and elastic.
  5. Fold in grated carrots, cinnamon, and nutmeg.
  6. Place the dough in a greased bowl; cover it and let it rise for about 1 hour, until it doubles in size.
  7. Roll out the dough to about 1/4 inch thick. Spread cream cheese across the surface, followed by sugar and cinnamon.
  8. Roll the dough tightly into a log and slice into 1-inch pieces.
  9. Arrange the rolls in a greased baking dish, cover, and let rise for another 30 minutes.
  10. Preheat your oven to 350°F (175°C) and bake the rolls for 25-30 minutes.
  11. Mix cream cheese, powdered sugar, and vanilla extract until smooth for frosting.
  12. Drizzle frosting over the rolls after they cool slightly.

Notes

You can prepare the dough and roll it into logs the night before for an easier morning bake.
