- 1 lb chicken breast, sliced
- 1 cup cashews
- 2 cups mixed vegetables (bell peppers, broccoli, carrots)
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat the oil: Place your skillet or wok over medium-high heat and add the vegetable oil.
- Cook the chicken: Introduce the sliced chicken to the pan, seasoning with salt and pepper. Sauté for 5–7 minutes.
- Add minced garlic and grated ginger to the skillet and stir for about a minute.
- Toss in your mixed vegetables and cook for an additional 3–4 minutes.
- Combine soy sauce, oyster sauce, and cornstarch in a bowl, then pour over the stir fry.
- Add the cashews and stir gently for about 2 more minutes.
- Serve your beautiful stir fry over a bed of fluffy cooked rice.
Notes
For added flavor, marinate the chicken in soy sauce for 20 minutes before cooking. You can also replace chicken with tofu for a vegetarian option.
