  • 1 cup cashews
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat the oil: Place your skillet or wok over medium-high heat and add the vegetable oil.
  2. Cook the chicken: Introduce the sliced chicken to the pan, seasoning with salt and pepper. Sauté for 5–7 minutes.
  3. Add minced garlic and grated ginger to the skillet and stir for about a minute.
  4. Toss in your mixed vegetables and cook for an additional 3–4 minutes.
  5. Combine soy sauce, oyster sauce, and cornstarch in a bowl, then pour over the stir fry.
  6. Add the cashews and stir gently for about 2 more minutes.
  7. Serve your beautiful stir fry over a bed of fluffy cooked rice.

Notes

For added flavor, marinate the chicken in soy sauce for 20 minutes before cooking. You can also replace chicken with tofu for a vegetarian option.
