Ingredients

- 1 lb ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 2 cloves garlic, minced
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 4 tablespoons butter
- Capers for garnish
Instructions
- Combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper in a large mixing bowl. Mix gently until just combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Heat the olive oil in a large skillet over medium heat. Add the meatballs and cook until golden brown on all sides, about 5-7 minutes.
- Remove the meatballs from the skillet and set aside.
- Pour the chicken broth and lemon juice into the same skillet and bring to a simmer, scraping up any browned bits from the bottom.
- Return the meatballs to the skillet and let them simmer gently for 10-15 minutes until cooked through.
- Stir in the butter until melted and blended into the sauce.
- Serve warm, garnished with capers and fresh parsley.
Notes
Refrigerate the meatball mixture for 20-30 minutes before shaping for better texture. You can also customize with different herbs or meats.
