Instructions
- Combine the diced pineapple, tomatillo, finely chopped onion, and minced garlic in a mixing bowl.
- Add in the minced chipotle peppers and mix well until evenly coated.
- Season with salt according to your taste, starting with a pinch.
- Rest the salsa for at least 10 minutes to let the flavors meld.
- Garnish with cilantro if desired and serve with tortilla chips or as a topping for tacos and grilled dishes.
Notes
Store leftover salsa in an airtight container in the fridge for up to three days or freeze for up to two months. A few hours in advance will enhance the flavors.
