- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 cup sugar
- 1/2 cup vegetable oil
- 1/2 cup milk
- 2 eggs
- 2 tsp vanilla extract
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter (softened)
- 1 3/4 cups powdered sugar
- 2–3 tbsp milk (for frosting)
- 1 tsp vanilla extract (for frosting)
- Pinch of salt (for frosting)
Instructions
- Preheat the oven to 350°F (175°C). Line a cupcake tray with colorful liners.
- Whisk together the flour, cocoa powder, baking powder, and salt in a large mixing bowl.
- Mix sugar and vegetable oil in a separate bowl until fully combined. Add the eggs, milk, and vanilla, and mix until smooth.
- Combine the wet and dry ingredients gently, stirring until just incorporated.
- Fill each cupcake liner about two-thirds full with batter.
- Bake for 18 to 22 minutes or until a toothpick inserted comes out clean.
- Cool the cupcakes completely on a cooling rack before frosting.
- Beat the softened butter for frosting until creamy. Gradually add cocoa powder and powdered sugar, mixing until well incorporated.
- Add milk, vanilla extract, and a pinch of salt to the frosting and mix until desired consistency is reached.
Notes
Store decorated cupcakes in an airtight container for up to a week. Can freeze for up to three months.
