Description
A flavorful dish combining spicy chorizo and tender chicken in a creamy sauce over pasta.
Ingredients
Scale
- 8 oz pasta (your choice)
- 1 cup chorizo, sliced
- 1 cup chicken breast, diced
- 1 can (14 oz) diced tomatoes
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions
- Sauté the aromatics: In a large pot over medium heat, add a splash of olive oil. Toss in the chopped onion and minced garlic, stirring until fragrant—around 2-3 minutes.
- Cook the meats: Add the sliced chorizo and diced chicken to the pot. Cook until the chicken turns golden and the chorizo becomes slightly crispy, about 5-7 minutes.
- Add the sauce: Stir in the can of diced tomatoes and pour in the heavy cream. Season with chili powder, salt, and pepper. Allow the mixture to come to a simmer, letting the flavors mingle for about 5 minutes.
- Cook the pasta: While your sauce simmers, add the pasta to the pot. Cook according to package directions until al dente, stirring occasionally.
- Garnish and serve: Once everything melds beautifully, remove from heat and garnish with fresh cilantro.
Notes
For a creamier texture, consider adding cheese and feel free to customize with vegetables like spinach or bell peppers.
