Churro Muffins combine the warm spices of cinnamon and sugar with a gooey dulce de leche center for a delightful treat.

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup dulce de leche or caramel sauce
- 1/4 cup sugar (for rolling)
- 1 teaspoon cinnamon (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon until combined.
- Combine Wet Ingredients: In another bowl, mix the melted butter, eggs, and vanilla extract until smooth.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry and fold gently until just combined.
- Prepare Muffin Cups: Fill each muffin cup halfway, add a spoonful of dulce de leche, and then top with more batter until three-quarters full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Sugar Coat: Roll each warm muffin in the cinnamon-sugar mixture.
- Serve immediately with extra dulce de leche on top.
Notes
These muffins can be made ahead and stored in an airtight container for up to 3 days, or frozen for up to a month.
