Description

A delightful and moist Cinnamon Coffee Cake, perfect for brunch or cozy gatherings, featuring a crunchy cinnamon swirl topping.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup packed brown sugar
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup powdered sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 9×13 inch baking pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs and vanilla extract, mixing until well combined.
  4. Whisk together the flour, baking powder, ground cinnamon, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, alternating with the milk, stirring gently.
  6. Pour half of the batter into the prepared baking pan, spreading it evenly.
  7. Sprinkle half of the brown sugar and cinnamon mixture over the batter.
  8. Layer the remaining batter over the first layer and top it with the rest of the brown sugar mixture and chopped nuts.
  9. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool slightly before drizzling it with a powdered sugar glaze, if desired.

Notes

You can prepare the batter ahead of time and store it in the fridge for up to 24 hours. For a gluten-free version, use a gluten-free flour blend.
