- 4 salmon fillets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
- Season the salmon with salt and pepper, placing skin-side down in the skillet, and cook for 6-7 minutes until golden brown.
- Flip the salmon fillets gently and cook for an additional 6-7 minutes until cooked through, then remove and rest on a plate.
- Sauté the garlic in the skillet until fragrant, about 1 minute.
- Add the sun-dried tomatoes and heavy cream, letting it bubble for 1-2 minutes.
- Thicken the sauce by whisking in the Parmesan cheese, simmering for 2-3 minutes.
- Return the salmon to the skillet, spooning sauce over the top, and warm through for one minute.
- Garnish with fresh basil before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half, or use parsley instead of basil. You can also make the sauce in advance.
