Description

A delicious salmon fillet seared to perfection paired with a creamy sun-dried tomato sauce, perfect for romantic dinners or special occasions.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a non-stick skillet over medium-high heat until shimmering.
  2. Season the salmon with salt and pepper, placing skin-side down in the skillet, and cook for 6-7 minutes until golden brown.
  3. Flip the salmon fillets gently and cook for an additional 6-7 minutes until cooked through, then remove and rest on a plate.
  4. Sauté the garlic in the skillet until fragrant, about 1 minute.
  5. Add the sun-dried tomatoes and heavy cream, letting it bubble for 1-2 minutes.
  6. Thicken the sauce by whisking in the Parmesan cheese, simmering for 2-3 minutes.
  7. Return the salmon to the skillet, spooning sauce over the top, and warm through for one minute.
  8. Garnish with fresh basil before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half, or use parsley instead of basil. You can also make the sauce in advance.
