Ingredients

  • ¼ teaspoon baking soda
  • ¾ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line your loaf pan with parchment paper for easy removal.
  2. Whisk together the flour, sugar, baking powder, baking soda, and salt in a mixing bowl until blended.
  3. Combine the melted butter with eggs, vanilla extract, sour cream, lemon zest, and lemon juice in another bowl. Whisk until smooth and creamy.
  4. Add the wet mixture into the dry ingredients gradually, folding gently with a spatula until just combined.
  5. Pour the batter into the prepared loaf pan, smoothing the top with your spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes before turning it out onto a wire rack.
  8. Whisk together the powdered sugar and lemon juice for the glaze. Drizzle it over the cooled cake.
