Description

Deliciously chewy and crunchy cookies filled with chocolate chips, oats, and nuts that offer a delightful blend of flavors and textures.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup chocolate chips
  • 1 cup chopped nuts (walnuts or pecans)
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar in a large bowl using an electric mixer on medium speed until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl, then gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the oats, chocolate chips, nuts, and coconut (if using) without overworking the dough.
  6. Drop rounded portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown while the centers remain soft.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

For thicker cookies, chill the dough in the fridge for about 30 minutes before baking.
