Instructions
- Cook the orzo: Begin by bringing a large pot of salted water to a boil. Add your orzo pasta and cook according to package instructions, around 8-10 minutes until al dente. Drain and rinse under cold water.
- Combine ingredients: In a large mixing bowl, combine the cooled orzo, halved cherry tomatoes, diced cucumber, diced bell pepper, red onion, chopped parsley, and crumbled feta cheese. Toss gently.
- Prepare the dressing: In a separate small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper until well combined.
- Combine salad and dressing: Pour the dressing over the pasta salad, ensuring everything is coated. Toss gently.
- Chill before serving: Cover the salad and let it chill in the refrigerator for at least 30 minutes before serving.
