Description
A rich and velvety dish that combines the earthiness of fresh spinach with the creaminess of heavy cream and the sharpness of Parmesan cheese, making it a perfect comfort food for any occasion.
Ingredients
Scale
- 2 pounds fresh spinach
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- A pinch of nutmeg (optional)
Instructions
- Blanch the spinach: In a large pot, bring water to a rolling boil. Add the fresh spinach and blanch for about 2 minutes until vibrant and tender. Quickly drain in a colander and rinse with cold water to stop the cooking process. Squeeze out any excess moisture, then roughly chop the drained leaves.
- Sauté the garlic: In a skillet, melt the butter over medium heat. Once melted, add the minced garlic and sauté until fragrant, about 1-2 minutes.
- Create the cream sauce: Stir in the heavy cream and increase the heat to bring the mixture to a gentle simmer, stirring occasionally.
- Add cheese and spinach: Once the cream simmers, slowly fold in the chopped spinach and the grated Parmesan cheese, stirring until combined.
- Season to perfection: Sprinkle in salt, pepper, and nutmeg if desired. Taste and adjust seasoning according to your preferences.
- Serve warm: Plate the creamed spinach and serve immediately.
Notes
Can be made ahead of time and reheated. Add a splash of cream while reheating if it thickens too much.
