Instructions

  1. Blanch the spinach: In a large pot, bring water to a rolling boil. Add the fresh spinach and blanch for about 2 minutes until vibrant and tender. Quickly drain in a colander and rinse with cold water to stop the cooking process. Squeeze out any excess moisture, then roughly chop the drained leaves.
  2. Sauté the garlic: In a skillet, melt the butter over medium heat. Once melted, add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Create the cream sauce: Stir in the heavy cream and increase the heat to bring the mixture to a gentle simmer, stirring occasionally.
  4. Add cheese and spinach: Once the cream simmers, slowly fold in the chopped spinach and the grated Parmesan cheese, stirring until combined.
  5. Season to perfection: Sprinkle in salt, pepper, and nutmeg if desired. Taste and adjust seasoning according to your preferences.
