Ingredients

- 1 pound ground beef
- 2 cups pasta (elbow or penne)
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 3 cups beef broth or water
- 1 can diced tomatoes with green chilies
- 1 cup corn (frozen or canned)
- Salt and pepper to taste
- Optional toppings: sour cream, chopped green onions, fresh cilantro
Instructions
- Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks.
- Add taco seasoning to the browned beef and drain excess fat.
- Combine the seasoned beef in the crockpot with uncooked pasta, beef broth (or water), diced tomatoes, corn, salt, and pepper. Stir gently.
- Cook on low for about 4 hours, or until the pasta is tender.
- Add shredded cheese and stir until melted.
- Serve warm, topped with optional garnishes like sour cream, green onions, or cilantro.
