Description

Ingredients

  • 1 pound ground beef
  • 2 cups pasta (elbow or penne)
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 3 cups beef broth or water
  • 1 can diced tomatoes with green chilies
  • 1 cup corn (frozen or canned)
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped green onions, fresh cilantro

Instructions

  1. Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks.
  2. Add taco seasoning to the browned beef and drain excess fat.
  3. Combine the seasoned beef in the crockpot with uncooked pasta, beef broth (or water), diced tomatoes, corn, salt, and pepper. Stir gently.
  4. Cook on low for about 4 hours, or until the pasta is tender.
  5. Add shredded cheese and stir until melted.
  6. Serve warm, topped with optional garnishes like sour cream, green onions, or cilantro.
