Drunken Beans combine pinto beans and hearty meats with a splash of beer, creating a creamy, comforting dish that’s perfect for gatherings.
Ingredients

- 2 cups pinto beans
- 4 cups beer (light lager or pale ale)
- 4 slices bacon, diced
- 1/2 pound sausage or chorizo, diced
- 2 jalapeños, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse and soak the pinto beans for at least 6 hours or overnight. Once soaked, drain and set the beans aside to dry slightly.
- Cook the diced bacon in a slow cooker or Instant Pot until crispy, about 5-7 minutes. Remove the bacon, leaving the drippings behind.
- Add the sausage or chorizo to the pot and brown for about 5-6 minutes.
- Toss in the diced onion, chopped jalapeños, and minced garlic. Sauté until the onions become soft, about 3-4 minutes.
- Stir in the soaked beans, pour the beer over the top, and sprinkle in the cumin, salt, and pepper. Mix gently to combine.
- For Slow Cooker: Set it on low for 6-8 hours, or high for 3-4 hours. For Instant Pot: Cook on high pressure for 30 minutes, then allow for natural release.
- Stir the crispy bacon back into the beans before serving.
Notes
Drunken Beans taste even better the next day! Store in the refrigerator overnight to allow the flavors to meld.
