Description

Drunken Beans combine pinto beans and hearty meats with a splash of beer, creating a creamy, comforting dish that’s perfect for gatherings.


Ingredients

Scale
  • 2 cups pinto beans
  • 4 cups beer (light lager or pale ale)
  • 4 slices bacon, diced
  • 1/2 pound sausage or chorizo, diced
  • 2 jalapeños, chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse and soak the pinto beans for at least 6 hours or overnight. Once soaked, drain and set the beans aside to dry slightly.
  2. Cook the diced bacon in a slow cooker or Instant Pot until crispy, about 5-7 minutes. Remove the bacon, leaving the drippings behind.
  3. Add the sausage or chorizo to the pot and brown for about 5-6 minutes.
  4. Toss in the diced onion, chopped jalapeños, and minced garlic. Sauté until the onions become soft, about 3-4 minutes.
  5. Stir in the soaked beans, pour the beer over the top, and sprinkle in the cumin, salt, and pepper. Mix gently to combine.
  6. For Slow Cooker: Set it on low for 6-8 hours, or high for 3-4 hours. For Instant Pot: Cook on high pressure for 30 minutes, then allow for natural release.
  7. Stir the crispy bacon back into the beans before serving.

Notes

Drunken Beans taste even better the next day! Store in the refrigerator overnight to allow the flavors to meld.
