Instructions

  1. Boil the potatoes: Begin by placing the small potatoes in a large pot of salted water. Bring it to a rolling boil and cook until tender, about 15-20 minutes. Drain and allow them to cool before slicing them in halves or quarters.
  2. Blanch the green beans: In the same pot of boiling water, add the trimmed green beans. Blanch them for 2-3 minutes until vibrant green. Transfer them to an ice bath to preserve their color and crispness. Drain and set aside.
  3. Prepare the dressing: In a large mixing bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, salt, and pepper until well combined.
  4. Combine the ingredients: Gently add the cooled potatoes and green beans to the bowl with the dressing. Toss everything together delicately to coat.
